Easy Homemade Sweet Potato Pie
Ingredients:
- 2 cups mashed sweet potatoes (about 2 large sweet potatoes)
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/2 cup evaporated milk
- 1 unbaked pie crust
- Whipped cream, for garnish
Directions:
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, and melted butter. Mix until well blended.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract, cinnamon, nutmeg, ginger, and salt.
- Gradually add the evaporated milk, mixing until smooth.
- Pour the sweet potato mixture into the unbaked pie crust.
- Bake for 55-60 minutes, or until a knife inserted into the center comes out clean.
- Allow the pie to cool completely before serving.
- Garnish with whipped cream before serving.
