Elegant Boston Cream Dessert Bars
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 tablespoons unsalted butter
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 1 cup dark chocolate, chopped
Directions:
- Preheat the oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
- In a bowl, mix flour, 1/2 cup sugar, baking powder, and salt. Add softened butter, eggs, and 1 teaspoon vanilla extract. Beat until smooth.
- Pour batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely.
- In a saucepan, combine milk and 1/2 cup sugar. Heat over medium heat until the sugar is dissolved and the mixture is hot but not boiling.
- In a separate bowl, whisk cornstarch and egg yolks until smooth. Slowly pour hot milk mixture into the egg mixture, whisking constantly.
- Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and begins to boil. Remove from heat and stir in 2 tablespoons butter and 1 teaspoon vanilla extract. Pour the custard over the cooled cake layer and refrigerate until set.
- To make the ganache, heat heavy cream in a small saucepan until it just begins to simmer. Remove from heat and pour over the chopped dark chocolate. Let sit for 2-3 minutes, then whisk until smooth.
- Pour the ganache over the set custard layer and refrigerate for at least 2 hours, or until the ganache is set.
- Cut into squares and serve.
