 Elegant Lemon Blueberry Cake 😋💜🍋

Ingredients:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup buttermilk
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • Zest of 2 lemons
  • 1 cup fresh blueberries
  • 2 cups heavy whipping cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • Lemon slices, for garnish
  • Fresh blueberries, for garnish
  • Edible flowers, for garnish

Directions:

  • Preheat the oven to 350°F (175°C). Grease and flour four 8-inch round cake pans.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In a separate bowl, combine the buttermilk, melted butter, eggs, vanilla extract, and lemon zest. Pour the wet ingredients into the dry ingredients and mix until just combined.
  • Gently fold in the blueberries.
  • Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  • In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  • To assemble the cake, place one cake layer on a serving plate and spread a generous amount of whipped cream frosting on top. Repeat with the remaining layers.
  • Frost the top and sides of the cake with the remaining whipped cream.
  • Garnish with lemon slices, fresh blueberries, and edible flowers.
