Elegant Lemon Blueberry Cake 😋💜🍋
Ingredients:
- 2 ½ cups all-purpose flour
- 1 ½ cups granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
- ½ cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons vanilla extract
- Zest of 2 lemons
- 1 cup fresh blueberries
- 2 cups heavy whipping cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Lemon slices, for garnish
- Fresh blueberries, for garnish
- Edible flowers, for garnish
Directions:
- Preheat the oven to 350°F (175°C). Grease and flour four 8-inch round cake pans.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, combine the buttermilk, melted butter, eggs, vanilla extract, and lemon zest. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the prepared cake pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- To assemble the cake, place one cake layer on a serving plate and spread a generous amount of whipped cream frosting on top. Repeat with the remaining layers.
- Frost the top and sides of the cake with the remaining whipped cream.
- Garnish with lemon slices, fresh blueberries, and edible flowers.
