Elegant Mini Rolo Cheesecakes 🍫🥰These Mini Rolo Cheesecakes are pure caramel and chocolate heaven! Perfect for satisfying your sweet tooth 😍🧁
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 cups cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup sour cream
- 1/4 cup caramel sauce
- 1 cup mini Rolo candies, chopped
- Additional mini Rolo candies for garnish
Directions:
- Preheat your oven to 325°F (163°C) and line a muffin tin with cupcake liners.
- In a bowl, combine the graham cracker crumbs and melted butter. Press a spoonful of the mixture into the bottom of each cupcake liner to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and eggs, one at a time, mixing well after each addition.
- Mix in the sour cream and caramel sauce until fully incorporated.
- Fold in the chopped mini Rolo candies.
- Divide the cheesecake batter evenly among the cupcake liners, filling each about 3/4 full.
- Bake for 18-20 minutes, or until the centers are set.
- Allow the cheesecakes to cool completely, then refrigerate for at least 2 hours before serving.
- Garnish with additional mini Rolo candies and a drizzle of caramel sauce.
