Escape to a tropical paradise with our Pineapple Mousse Cheesecake Bars - creamy, dreamy, and absolutely divine! 



Ingredients:

- In a bowl, mix graham cracker crumbs, white sugar, and melted butter. Press into the bottom of a greased 9x13 inch baking pan to form a crust.
- In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
- Sprinkle gelatin over 1/4 cup of water in a small saucepan. Let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Mix into the crushed pineapple, then fold the pineapple mixture into the cream cheese mixture.
- Spread the filling over the crust in the pan. Refrigerate for at least 3 hours or until set.
- Cut into bars and serve chilled.
