 Escape to a tropical paradise with our Pineapple Mousse Cheesecake Bars - creamy, dreamy, and absolutely divine! 🍍🍰

Ingredients:
    • 1 1/2 cups graham cracker crumbs
    • 1/4 cup white sugar
    • 1/2 cup unsalted butter, melted
    • 2 cups cream cheese, softened
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • 1 cup heavy cream
    • 1 can (20 oz) crushed pineapple, drained
    • 1 packet (0.25 oz) unflavored gelatin
Directions:
    • In a bowl, mix graham cracker crumbs, white sugar, and melted butter. Press into the bottom of a greased 9x13 inch baking pan to form a crust.
    • In a large bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
    • In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture.
    • Sprinkle gelatin over 1/4 cup of water in a small saucepan. Let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved. Mix into the crushed pineapple, then fold the pineapple mixture into the cream cheese mixture.
    • Spread the filling over the crust in the pan. Refrigerate for at least 3 hours or until set.
    • Cut into bars and serve chilled.
