Heavenly Cherry Pistachio Cheesecake Bars 💚🍒
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup chopped pistachios
- 1 1/2 cups cherry pie filling
Directions:
- Preheat oven to 325°F (165°C). Line a 9x13-inch baking pan with parchment paper.
- In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of the prepared pan to form the crust.
- In a large bowl, beat the cream cheese and sugar until smooth. Add the vanilla extract and mix well.
- Add the eggs one at a time, beating well after each addition. Mix in the sour cream until fully combined.
- Pour the cream cheese mixture over the crust and spread it evenly.
- Dollop the cherry pie filling over the cream cheese layer and swirl gently with a knife to create a marbled effect.
- Sprinkle the chopped pistachios on top.
- Bake for 40-45 minutes, or until the cheesecake is set and slightly golden around the edges.
- Allow to cool to room temperature, then refrigerate for at least 2 hours before cutting into bars.
