- Add the sugar, beaten egg, and vanilla extract to the banana mixture and mix well.
- Sprinkle the baking soda and salt over the mixture and stir to combine.
- Add the flour and mix until just incorporated.
- Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- While the bread is cooling, prepare the coffee glaze by mixing the powdered sugar, brewed coffee, and vanilla extract until smooth.
- Drizzle the coffee glaze over the cooled banana bread before slicing and serving.
