Hummingbird Banana Pineapple Bread ππ
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup granulated sugar
- 1/2 cup light brown sugar, packed
- 3 large eggs
- 1 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup crushed pineapple, drained
- 2 ripe bananas, mashed
- 1/2 cup chopped pecans, plus extra for topping
- 1/2 cup chopped pineapple, for topping
Directions:
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well blended.
- Add the dry ingredients to the wet ingredients and mix just until combined.
- Fold in the crushed pineapple, mashed bananas, and chopped pecans.
- Pour the batter into the prepared loaf pan. Top with additional chopped pineapple and pecans.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
