Ingredients:
    • 2 cups all-purpose flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 1 cup granulated sugar
    • 1/2 cup light brown sugar, packed
    • 3 large eggs
    • 1 cup vegetable oil
    • 1 teaspoon vanilla extract
    • 1 cup crushed pineapple, drained
    • 2 ripe bananas, mashed
    • 1/2 cup chopped pecans, plus extra for topping
    • 1/2 cup chopped pineapple, for topping
Directions:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
    • In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
    • In a large bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, and vanilla extract. Mix until well blended.
    • Add the dry ingredients to the wet ingredients and mix just until combined.
    • Fold in the crushed pineapple, mashed bananas, and chopped pecans.
    • Pour the batter into the prepared loaf pan. Top with additional chopped pineapple and pecans.
    • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
    • Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
