Ingredients:
- For the Brownie Layer:
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- For the Raspberry Swirl:
- 1 cup raspberries, fresh or frozen
- 2 tablespoons granulated sugar
- 1 tablespoon cornstarch
- 2 tablespoons water
- For the Cheesecake Layer:
- 2 cups cream cheese, softened
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
Directions:
- Preheat the oven to 350°F (175°C). Line a 9x9 inch baking pan with parchment paper.
- In a bowl, mix together melted butter, 1 cup sugar, and 2 eggs. Stir in flour, cocoa powder, baking powder, salt, and vanilla until well combined. Fold in chocolate chips. Spread the brownie mixture into the prepared pan.
- In a saucepan, combine raspberries, 2 tablespoons sugar, cornstarch, and water. Cook over medium heat until the sauce thickens. Strain to remove seeds.
- Blend cream cheese, 1/2 cup sugar, 2 eggs, and vanilla extract until smooth. Pour over the brownie layer.
- Drop spoonfuls of raspberry sauce over the cheesecake layer and use a toothpick to create swirls.
- Bake for 35-40 minutes, or until the cheesecake is set. Let cool before slicing.
