Ingredients:
    • 2 cups all-purpose flour
    • 2 teaspoons baking powder
    • 1/2 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 teaspoon garlic powder
    • 1 teaspoon dried oregano
    • 3 large eggs
    • 1/4 cup vegetable oil
    • 1/4 cup sour cream
    • 2 cups grated zucchini (about 2 medium)
    • 1 cup shredded sharp cheddar cheese
    • 1/4 cup chopped jalapeΓ±os (optional)
Directions:
    • Preheat oven to 375°F (190°C). Grease and flour a 9x5 inch loaf pan.
    • In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and oregano.
    • In another bowl, beat eggs with vegetable oil and sour cream until smooth.
    • Stir the wet ingredients into the dry ingredients until just combined. Fold in grated zucchini, cheddar cheese, and jalapeΓ±os if using.
    • Pour the batter into the prepared loaf pan. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
    • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
