Luscious Pecan-Caramel Cake
Ingredients:
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup milk
- 1 tsp vanilla extract
- 1 1/2 cups chopped pecans
- 1 cup caramel sauce
Directions:
- Preheat oven to 350°F (175°C). Grease and flour a loaf pan.
- In a large bowl, cream the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition.
- In another bowl, whisk together the flour, baking powder, and salt. Gradually add to the butter mixture alternately with the milk, beginning and ending with the flour mixture. Stir in the vanilla extract and chopped pecans.
- Pour the batter into the prepared pan and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
- Drizzle the cooled cake with caramel sauce and sprinkle with additional chopped pecans before serving.
