Ingredients:
  • 1 1/2 cups chocolate cookie crumbs
  • 1/4 cup melted butter
  • 2 cups fresh raspberries
  • 1/4 cup sugar
  • 2 teaspoons cornstarch
  • 3 packages (8 oz each) cream cheese, softened
  • 1 cup sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
Directions:

  • Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a medium bowl, mix the chocolate cookie crumbs and melted butter. Press the mixture firmly into the bottom of the prepared pan. Set aside.
  • In a small saucepan, combine the raspberries, 1/4 cup sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the raspberries break down. Remove from heat and strain through a fine mesh sieve to remove the seeds. Set aside.
  • In a large bowl, beat the cream cheese and 1 cup sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream until well combined.
  • Pour half of the cream cheese mixture over the crust in the springform pan. Drop spoonfuls of the raspberry sauce over the cream cheese mixture and swirl with a knife. Pour the remaining cream cheese mixture on top and swirl in the remaining raspberry sauce.
  • Bake for 50-60 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven with the door slightly open for 1 hour.
  • Refrigerate for at least 4 hours or overnight before serving. Top with fresh raspberries.
