Ingredients
    • For the Cake:
    • 1 box white cake mix (plus ingredients listed on the box)
    • 1 cup white chocolate chips
    • For the Blackberry Sauce:
    • 2 cups fresh blackberries
    • 1/2 cup sugar
    • 1/4 cup water
    • 1 tablespoon lemon juice
    • 1 tablespoon cornstarch mixed with 2 tablespoons water
    • For the Poke Filling:
    • 1 can (14 oz) sweetened condensed milk
    • 1/2 cup white chocolate chips, melted
    • For the Frosting:
    • 1 1/2 cups heavy whipping cream
    • 1/2 cup powdered sugar
    • 1 teaspoon vanilla extract
    • For Garnish:
    • Fresh blackberries
    • Edible flowers (optional)
Instructions
    • Prepare the Cake:
    • Preheat your oven according to the cake mix instructions.
    • Prepare the white cake mix as per the package instructions, adding 1 cup of white chocolate chips to the batter.
    • Pour the batter into a greased 9x13 inch baking dish.
    • Bake the cake according to the package instructions until a toothpick inserted in the center comes out clean.
    • Let the cake cool completely.
    • Make the Blackberry Sauce:
    • In a medium saucepan, combine the blackberries, sugar, water, and lemon juice.
    • Bring to a simmer over medium heat, stirring occasionally until the berries break down and the mixture thickens (about 10 minutes).
    • Stir in the cornstarch mixture and cook for another 2-3 minutes until the sauce thickens further.
    • Remove from heat and let it cool completely.
    • Prepare the Poke Filling:
    • Once the cake is cooled, use the handle of a wooden spoon to poke holes all over the cake.
    • In a medium bowl, combine the sweetened condensed milk and melted white chocolate chips.
    • Pour the mixture evenly over the cake, allowing it to soak into the holes.
    • Add the Blackberry Sauce:
    • Spread the cooled blackberry sauce over the top of the cake, letting it drip into the holes.
    • Prepare the Frosting:
    • In a large bowl, beat the heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
    • Spread the whipped cream evenly over the top of the cake.
    • Garnish and Serve:
    • Garnish with fresh blackberries and edible flowers for an extra touch of elegance.
    • Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld.
