No Bake Orange Creamsicle Cheesecake
Ingredients:
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 6 tbsp butter, melted
- For the Orange Mousse Layer:
- 2 cups heavy cream
- 1 cup orange juice concentrate, thawed
- 1/2 cup sugar
- 1 tbsp orange zest
- 2 tsp gelatin, dissolved in 1/4 cup water
- For the Cream Cheese Layer:
- 2 cups cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- For the Topping:
- 1 cup heavy cream, whipped
- Orange slices for garnish
- Additional orange zest for sprinkling
Directions:
- For the Crust:
- Mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of a springform pan. Chill in the refrigerator for at least 30 minutes to set.
- For the Orange Mousse Layer:
- In a mixing bowl, whip the heavy cream until soft peaks form. Gradually add sugar while continuing to whip to stiff peaks. Fold in orange juice concentrate and orange zest.
- Warm the dissolved gelatin until it turns liquid and mix it quickly into the orange cream mixture. Pour over the prepared crust and return to the fridge to set for about 2 hours.
- For the Cream Cheese Layer:
- Beat the cream cheese with powdered sugar and vanilla extract until smooth and creamy. Spread this mixture over the set orange mousse layer. Chill again until firm.
- For the Topping:
- Spread whipped cream over the top of the cheesecake. Garnish with orange slices and sprinkle with orange zest before serving.
