Ingredients
- For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- For the Peach Mousse:
- 2 cup fresh or canned peach slices, drained
- 2 tablespoons lemon juice
- 1/2 cup powdered sugar
- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1 cup heavy cream, whipped
- For the Cream Cheese Layer:
- 16 oz cream cheese, softened
- 1 teaspoon vanilla extract
- 1/2 cup granulated sugar
- For the Topping:
- 1 cup heavy cream, whipped
- Peach slices for garnish
- Mint leaves (optional)
Directions
- Crust:
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
- Peach Mousse:
- In a blender, puree peach slices with lemon juice and powdered sugar until smooth.
- In a small saucepan, sprinkle gelatin over cold water and let stand for 1 minute. Heat over low heat, stirring until gelatin is dissolved. Cool slightly, then stir into the peach puree.
- Fold whipped cream into the peach puree until well combined.
- Cream Cheese Layer:
- In a large bowl, beat cream cheese with 1/2 cup granulated sugar and vanilla extract until smooth and creamy.
- Assembly:
- Pour the peach mousse mixture over the cooled crust, smoothing the top.
- Spread the cream cheese mixture over peach mousse mixture .
- Refrigerate for at least 4 hours or until set.
- Topping:
- Before serving, garnish with whipped cream, additional peach slices, and mint leaves if desired.
