Ingredients

  • For the Crust:
  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • For the Peach Mousse:
  • 2 cup fresh or canned peach slices, drained
  • 2 tablespoons lemon juice
  • 1/2 cup powdered sugar
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 cup heavy cream, whipped
  • For the Cream Cheese Layer:
  • 16 oz cream cheese, softened
  • 1 teaspoon vanilla extract
  • 1/2 cup granulated sugar
  • For the Topping:
  • 1 cup heavy cream, whipped
  • Peach slices for garnish
  • Mint leaves (optional)

Directions

  • Crust:
  • Preheat the oven to 350°F (175°C).
  • In a medium bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press the mixture into the bottom of a 9-inch springform pan. Bake for 10 minutes and let cool.
  • Peach Mousse:
  • In a blender, puree peach slices with lemon juice and powdered sugar until smooth.
  • In a small saucepan, sprinkle gelatin over cold water and let stand for 1 minute. Heat over low heat, stirring until gelatin is dissolved. Cool slightly, then stir into the peach puree.
  • Fold whipped cream into the peach puree until well combined.
  • Cream Cheese Layer:
  • In a large bowl, beat cream cheese with 1/2 cup granulated sugar and vanilla extract until smooth and creamy.
  • Assembly:
  • Pour the peach mousse mixture over the cooled crust, smoothing the top.
  • Spread the cream cheese mixture over peach mousse mixture .
  • Refrigerate for at least 4 hours or until set.
  • Topping:
  • Before serving, garnish with whipped cream, additional peach slices, and mint leaves if desired.
