Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups sliced fresh peaches
- 2 cups sliced fresh plums
- 1/4 cup peach jelly, melted for drizzling
Directions:
- In a medium bowl, combine graham cracker crumbs and melted butter until well mixed. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Chill in the refrigerator for at least 30 minutes.
- In a large bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
- In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.
- Pour half of the cream cheese mixture over the chilled crust, spreading evenly.
- Arrange a layer of sliced peaches and plums over the cream cheese layer.
- Pour the remaining cream cheese mixture over the fruit layer, spreading evenly to cover the fruit.
- Top the cheesecake with additional sliced peaches and plums for decoration.
- Drizzle the melted peach jelly over the top for a glossy finish.
- Chill the cheesecake in the refrigerator for at least 4 hours or until set. Slice and serve.
