Ingredients:
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup milk
  • Zest of 1 orange
  • Zest of 1 lemon
  • Zest of 1 lime
  • ¼ cup fresh orange juice
  • ¼ cup fresh lemon juice
  • ¼ cup fresh lime juice
  • Filling:

  • 1 cup sweetened condensed milk
  • 1 tbsp lemon zest
  • 1 tbsp lime zest
  • Frosting:
  • 1 cup unsalted butter, room temperature
  • 4 cups powdered sugar
  • 2-3 tbsp fresh orange juice
  • 2-3 tbsp fresh lemon juice
  • 2-3 tbsp fresh lime juice
  • Garnish:
  • Thin orange slices
  • Thin lemon slices
  • Thin lime slices
  • Additional zest from orange, lemon, and lime
Directions:

  • Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  • In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
  • Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Stir in the citrus zests and juices until just combined.
  • Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.
  • For the filling, mix the sweetened condensed milk with the lemon and lime zests. Set aside.
  • For the frosting, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. Add the citrus juices one tablespoon at a time until the desired consistency is reached.
  • Once the cupcakes are cool, use a small knife to cut a hole in the center of each cupcake. Fill each hole with the citrus filling.
  • Pipe the frosting onto the cupcakes, and garnish with thin slices of orange, lemon, lime, and additional zest.
