Refreshing Triple Citrus Burst Cupcakes πππ
Ingredients:
- 1 ½ cups all-purpose flour
- 1 ½ tsp baking powder
- ¼ tsp salt
- ½ cup unsalted butter, room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup milk
- Zest of 1 orange
- Zest of 1 lemon
- Zest of 1 lime
- ¼ cup fresh orange juice
- ¼ cup fresh lemon juice
- ¼ cup fresh lime juice
- Filling:
- 1 cup sweetened condensed milk
- 1 tbsp lemon zest
- 1 tbsp lime zest
- Frosting:
- 1 cup unsalted butter, room temperature
- 4 cups powdered sugar
- 2-3 tbsp fresh orange juice
- 2-3 tbsp fresh lemon juice
- 2-3 tbsp fresh lime juice
- Garnish:
- Thin orange slices
- Thin lemon slices
- Thin lime slices
- Additional zest from orange, lemon, and lime
Directions:
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
- In a large bowl, beat the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
- Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients. Stir in the citrus zests and juices until just combined.
- Divide the batter evenly among the prepared cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the cupcakes to cool completely on a wire rack.
- For the filling, mix the sweetened condensed milk with the lemon and lime zests. Set aside.
- For the frosting, beat the butter until creamy. Gradually add the powdered sugar, beating until smooth. Add the citrus juices one tablespoon at a time until the desired consistency is reached.
- Once the cupcakes are cool, use a small knife to cut a hole in the center of each cupcake. Fill each hole with the citrus filling.
- Pipe the frosting onto the cupcakes, and garnish with thin slices of orange, lemon, lime, and additional zest.
