Ingredients:
- For the Cake:
- 2 1/2 cups all-purpose flour

- 1/4 cup fresh lime juice
- 1/4 cup fresh orange juice
- 1 tablespoon lemon zest
- 1 tablespoon lime zest
- 1 tablespoon orange zest
- 1 cup whole milk
- For the Citrus Glaze:
- 1 1/2 cups powdered sugar
- 2 tablespoons fresh lemon juice
- 2 tablespoons fresh lime juice
- 2 tablespoons fresh orange juice
- 1 teaspoon lemon zest
- 1 teaspoon lime zest
- 1 teaspoon orange zest
Directions:
- Prepare the Cake:
- Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
- In a medium bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- Mix in the lemon juice, lime juice, orange juice, and zest.
- Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- Prepare the Citrus Glaze:
- In a medium bowl, whisk together the powdered sugar, lemon juice, lime juice, orange juice, and zest until smooth.
- Assemble the Cake:
- Place one cake layer on a serving plate. Spread a thin layer of glaze over the top. Repeat with the second and third layers.
- Pour the remaining glaze over the top of the cake, allowing it to drip down the sides.
