Ingredients:
    • For the Cake:
    • 2 1/2 cups all-purpose flour
    • 2 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 1 cup unsalted butter, softened
    • 2 cups granulated sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 1/4 cup fresh lemon juice
    • 1/4 cup fresh lime juice
    • 1/4 cup fresh orange juice
    • 1 tablespoon lemon zest
    • 1 tablespoon lime zest
    • 1 tablespoon orange zest
    • 1 cup whole milk
    • For the Citrus Glaze:
    • 1 1/2 cups powdered sugar
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons fresh lime juice
    • 2 tablespoons fresh orange juice
    • 1 teaspoon lemon zest
    • 1 teaspoon lime zest
    • 1 teaspoon orange zest
Directions:
    • Prepare the Cake:
    • Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
    • In a medium bowl, whisk together the flour, baking powder, and salt.
    • In a large bowl, cream the butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
    • Mix in the lemon juice, lime juice, orange juice, and zest.
    • Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
    • Divide the batter evenly between the prepared pans.
    • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
    • Prepare the Citrus Glaze:
    • In a medium bowl, whisk together the powdered sugar, lemon juice, lime juice, orange juice, and zest until smooth.
    • Assemble the Cake:
    • Place one cake layer on a serving plate. Spread a thin layer of glaze over the top. Repeat with the second and third layers.
    • Pour the remaining glaze over the top of the cake, allowing it to drip down the sides.
