🤍💚 White Chocolate Pistachio Muffins 😋🧁

Ingredients:

    • 1 1/2 cups all-purpose flour
    • 1/2 cup granulated sugar
    • 1/2 cup packed light brown sugar
    • 1/2 teaspoon baking powder
    • 1/4 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, melted and cooled
    • 2 large eggs
    • 1/2 cup plain Greek yogurt
    • 1/4 cup milk
    • 1 teaspoon vanilla extract
    • 1 cup shelled pistachios, finely chopped
    • 1 cup white chocolate chips, melted

Directions:

    • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
    • In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
    • In another bowl, combine the melted butter, eggs, Greek yogurt, milk, and vanilla extract.
    • Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped pistachios.
    • Divide the batter evenly among the muffin cups.
    • Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
    • Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
    • Drizzle the melted white chocolate over the cooled muffins and sprinkle with additional chopped pistachios if desired.
