🤍💚 White Chocolate Pistachio Muffins 😋🧁
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted and cooled
- 2 large eggs
- 1/2 cup plain Greek yogurt
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 cup shelled pistachios, finely chopped
- 1 cup white chocolate chips, melted
Directions:
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
- In another bowl, combine the melted butter, eggs, Greek yogurt, milk, and vanilla extract.
- Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the chopped pistachios.
- Divide the batter evenly among the muffin cups.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
- Drizzle the melted white chocolate over the cooled muffins and sprinkle with additional chopped pistachios if desired.
