Blueberry Chocolate Lavender Dream Cake
Ingredients
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1/2 cup whole milk
- 1/2 cup cocoa powder
- 1 cup fresh blueberries
- 1 tbsp dried culinary lavender
- 1/2 cup blueberry jam
- 2 cups cream cheese frosting
- Fresh blueberries and lavender sprigs for garnish
- Chocolate ganache (optional)
Instructions
- Preheat Oven
- Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans.
- Mix Dry Ingredients
- In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder.
- Cream Butter & Sugar
- In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, then mix in the vanilla extract.
- Combine Mixtures
- Gradually add the dry ingredients to the butter mixture, alternating with the sour cream and milk. Mix until just combined, being careful not to overmix.
- Add Blueberries
- Gently fold in the fresh blueberries. Divide the batter evenly between the prepared cake pans.
- Bake
- Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Cool & Frost
- Allow the cakes to cool on a wire rack. Once cool, spread a layer of cream cheese frosting on top of one cake layer, then place the second layer on top. Frost the top and sides of the cake with lavender-infused cream cheese frosting.
- Garnish
- Garnish the cake with fresh blueberries, lavender sprigs, and a drizzle of chocolate ganache if desired.
