White German Chocolate Cake with a Cheesecake Center
Ingredients
For the White German Chocolate Cake:
- 1 cup (4 oz) German chocolate, chopped
- ½ cup (1 stick) unsalted butter
- 1 cup granulated sugar
- ½ cup brown sugar, packed
- 3 large eggs, separated
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup buttermilk
For the Cheesecake Center:
- 8 oz cream cheese, softened
- ¼ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- For the Frosting:
- ½ cup (2 oz) German chocolate, chopped
- ¼ cup unsalted butter
- 1 cup powdered sugar
- 1 tablespoon milk
- 1 teaspoon vanilla extract
Directions
- Prepare the Oven and Pans:
- Preheat your oven to 350°F (175°C).
- Grease and flour two 9-inch round cake pans.
- Make the Cheesecake Center:
- In a mixing bowl, beat the softened cream cheese and granulated sugar until smooth.
- Add the egg and vanilla extract, mixing until well combined. Set aside.
- Make the Cake Batter:
- In a small saucepan, melt the chopped German chocolate and butter over low heat, stirring until smooth. Remove from heat and allow it to cool slightly.
- In a large mixing bowl, combine the granulated sugar, brown sugar, and egg yolks. Beat until light and fluffy.
- Stir in the melted chocolate mixture and vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the flour mixture to the chocolate mixture, alternating with the buttermilk, starting and ending with the flour mixture.
- In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the batter.
- Assemble the Cake:
- Pour half of the cake batter into each prepared cake pan.
- Divide the cheesecake mixture evenly between the two pans, spooning it over the batter layer.
- Top with the remaining cake batter, spreading it carefully over the cheesecake layer.
- Bake the Cake:
- Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cakes to cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.
- Prepare the Frosting:
- In a small saucepan, melt the German chocolate and butter over low heat, stirring until smooth. Remove from heat and let it cool slightly.
- In a mixing bowl, combine the powdered sugar, milk, and vanilla extract. Gradually add the melted chocolate mixture, mixing until smooth and well combined.
- Assemble the Cake:
- Place one cake layer on a serving platter and spread a layer of frosting on top.
- Add the second cake layer, then frost the top and sides of the cake with the remaining frosting.
